Dill Potatoes - Quick and Easy

Dill Potatoes
Dill or Suva baji is a very fragrant herb. It has a very strong aroma that overpowers any other ingredient in the recipes. Whats a better partner to Dill than the lovely potato. They just go together like made for each other.

I usually make a simple Dill stir fry with moong dal that I posted in the past. This time I wanted to make something different.
And also the time is clicking for the entries to the JFI:Potatoes. So I decided to make dill with potatoes just like aloo methi. The results were great. Ready in 15 minutes.

1 bunch dill
1 or 2 Potatoes, diced
7-10 cloves of garlic
½ tsp chilli powder
½ tsp turmeric powder
1 tsp oil

Wash and chop dill. Dice potatoes and rinse with water, drain and set aside.
Heat oil in a kadai, fry garlic till light brown, add chilli powder & turmeric and sauté till aromatic. Add potatoes, dill, little water and salt, cook till potatoes are tender and all the water is evaporated.

Serve with chapathi.

Not many like the flavor of dill and I was among them. But lately after trying it over and over I have started liking it and dill with potatoes will surely be a good combo. Loved the picture.

I purchased dill for the first time last weekend. I used a little in the minestrone soup I made and the rest has been sitting in the fridge for inspiration to strike. I'm so glad that you posted this recipe, I will try it this weekend.

That looks nice. Once upon a time I was hige fan of dill. Somehow my hubby is intolerant to this herb. So there days I have stopped using it. I think the potatoes will compensate for the strong smell and taste of dill in this dish. Thanks for sharing.
