Veggie Patty with Brown rice & Barley

Veggie Burger

I just love the veggie patty in the Subway Sandwiches. Last week, I was reading the recipe for Aloo tikki on Homespices and an idea just flashed me to make the veggie patties at home. Aloo tikki is an great alternative for the veggie patties, but I wanted it be filled with veggies and high fiber. I peeked in my pantry and found some brown rice, barley and bits and pieces of leftover veggies. I managed to come up with a my own recipe for veggie patty. It was just delicious, I gobbled up a few for evening snack, they were like cutlets.



Here is the recipe
handful of each of the ingredients
brown rice, cooked
barley, cooked
1 medium potato, cooked
carrot, finely diced
mushroom
peas
corn
edamame or tender soy beans
onions
1/2 jalapeño or green chilli diced

salt and pepper
bread crumbs, optional

oil for frying

Veggie Patty Making
Mash potato, rice and barley with your hand or a fork. Cook carrots, corn, peas, edamame and jalapeño in the microwave till they are done. Add salt and pepper and mix together all the ingredients into a lump. Divide into lemon size balls and press between the palms of your hands to form flat discs or desired shape.

If desired dust the patties with bread crumbs. This gives a crispy texture to the patties.

Heat the griddle, add a tsp of oil and place the patties. Be little generous with oil to make the the patties crunchy. Fry on medium flame till golden brown on all sides.

Make sandwiches with 1 or 2 patties in the center, some round diced tomatoes, grilled onions, lettuce, ketchup or mayonnaise on a whole wheat bun.

Veggie Burger

Enjoy as a cutlet for a evening snack with ketchup or make sandwiches for a complete meal.

brown rice in patties? thats quite fresh n innovative manjula. very rich and beautiful colour. i can have it w/o complaining.

Manula, your burgers look very good. I keep making these(without brown rice), next will will try adding rice. I add some south west sauce to my burgers/subs to get the subway taste. They taste yumm.

Good job manju, this looks healthy and delicious. Do you watch America's test kitchen. few weeks back I saw lentil and nuts burger.
I never tried making patty at him. I love barely soup for CKP.

Yes, I do watch America's test kitchen. Its my favorite show, I watch it on PBS. I guess I missed the episode you mentioned.

What does CKP stand for?
